it's been a hot minute since i've written a post
i've missed you
i haven't stopped writing-- eh, it's just kind of evolved into more personal reflection lately
which isn't really a good excuse but it's all i've got
let's talk cake
you should know, i make some version of german chocolate cake every year in june
for my dear friend, jess
which always feels a little strange because it's june, hot AF, and i feel like fruit should be involved
but now it's just become tradition
each and every year, i believe we have some version of the same conversation
i ask what kind of cake she wants-- past the point of surprises
she says- what do you think?
i say- german chocolate, again, really?
she says- yes, amy
i say- are you sure?
and so it goes, i make german chocolate cake every year in june
but always with a twist
can't help myself
so this time around, i styled it with thicker layers of filling and no outer frosting
i wanted to see the contrast of different shades of brown cake, filling, + frosting --you feel me?
my favorite part about this cake is the homemade coconut pecan filling
i could make that and pour it over anything in life and probably be completely content
it's a simple little custard made w/ egg yolk, sugar, cream, toasted coconut + pecans
something to note-- i absolutely, hands down, recommend keeping the cake very much chilled until serving
naturally, i did NOT do this
by the time it was served, things got weird
picture this shit--
i stick the knife into my little beauty queen
the perfect coconut pecan filling starts oozing out everywhere
which is immediately concerning because everyone needs to be eating that
the cake is moist (as it should be) but since it's naked and all, it has less structure, and starts to crumble
my hands are literally immersed in chocolate + sugar throughout my poor attempts to maneuver cake to plate
everyone one is like circled around me, you know, just watching the massacre
at this point, i begin to wonder if i will ever get my life in order
i'm awkward as ever, cheeks red i'm sure, laughing, trying way too hard to avoid licking my fingers
in my mind, i have already gotten up, thrown the cake against the wall and left the party
but i rode it out... watched my work of art crumble
the good news?
we all survived
and we all somehow managed to eat that cake
i think i still have chocolate under my nails...but life could be worse
all that to say
keep the cake chilled

GERMAN CHOCOLATE CAKE
ANY CHOCOLATE CAKE- see my recipe HERE
COCONUT PECAN FILLING
heat yolks, cream, sugar in large sauce pan over medium heat // whisk around and cook until thickened + mixture coats the back of a spoon sufficiently
pour over pecans and coconut
chill in fridge until thickened up
coconut, shredded, toasted 1.5 c.
pecans, chopped, toasted, 2 c.
egg yolks, 6 ct.
heavy cream, 2 c.
sugar, 2 c.
MILK CHOCOLATE BUTTERCREAM
heat chocolate + cream over double boiler to prevent burning // whisk together until smooth // set aside to a cool a bit
whisk together butter until light + creamy // add in sugar + cocoa powder // add chocolate mixture, salt, vanilla
taste and add more sugar or cream or salt or whatever per your taste + texture preference
unsalted butter, 3 c.
powder sugar, uh 3-4 c.
good quality cocoa powder, 1/2 c.
milk chocolate, 8 oz
// i use french chocolate duh --link here
heavy cream, 1/4 c. or so
sea salt, sprinkle
ASSEMBLY + SUCH
you can probably guess how to assemble this fox by taking a look at the photos // layer the cake, then a thick layer of coconut pecan filling, then a thick layer of buttercream annnnnd repeat
it helps to freeze in between each layer of frosting to keep it from losing shape
remember, this coconut pecan filling is tricky and finicky, handle w/ care, keep it chilled unless using
you'll want an icing spatula to smear the edges to give it the look i did
this part is fun-- get creative, let your hair down, get cake + frosting everywhere, turn on something good, and you might end up w/ a different look than i did which honestly is better because you've made it your own
annnnnd if all else fails and things start to go south, you can always whip up extra frosting to cover it all up :)
