i got a new coffee cup over the weekend
it's kind of a weird ritual i have
can i tell you about it?

anytime i'm feeling weird or not myself
i get a new coffee mug
it's my thing
sometimes i'm wondering around target
sometimes it just jumps out at me
this began many moons ago- back in college
i have a lot of coffee mugs
which could be seen as really sad
but i like to think of it as a friendly reminder of all the shit i've overcome
when i drink out of them, it jogs my memory of specific times in my life that were hard but made me better
it's more empowering than sad, actually
i found the latest one wondering around anthropologie looking for candles
i knew she was it for me
the coolest mug yet
the first mug i got was so ugly + generic - not sure what i was thinking then
such is life
should we move on to granola + smoothie bowl talk???
if i'm anything, I'm pro-homemade granola
it's just better
and recently i read somewhere (probably bon appetit) that adding an egg white to the granola mixture gives it a cookie-like texture--- uhhhh duh who wouldn't want that?
so i added an egg white and couldn't have been more pleased w/the result
this magical egg white created a softer texture while still maintaining the integrity of a true granola that's somewhat crunchy and can be sprinkled over stuff
am i making sense or what?
i also experimented w/using olive oil vs. butter as the fat
both worked great but i liked the caramel-y flavor of the butter more
like you probably noticed in the photos, i sprinkled this delicious granola over a smoothie bowl

mix together butter, sugar/syrup, extracts, spices
mix in oats + nuts into wet mixture
spread evenly over cookie sheet lined w/ parchment paper
cook at 325F for 50 min.
old fashioned oats, 3 c. dry
slivered almonds, 1/2 c.
whole almonds, 1/2 c.
maple syrup, 1/2 c.
brown sugar, 1/2 c.
melted butter unsalted, 1/2 c.
vanilla extract, 1 tsp
almond extract, 1 tsp
cinnamon, 1 tsp
kosher salt sprinkle
