chocolate and raspberry were made for each other
we know this, right? it's obvious
like everyone needs to just get out of their way
the strawberry comes close, but let's be real, it will never be a raspberry
and that's okay

so i made another cake- SHOCKER
i almost forgot to take photos because i was the epitome of chaos on Saturday
--- which is pretty normal but it's been on a new level lately
luckily my friends lindsay + lindsey + aimee insisted we document the cake
we barely made it too
they fluffed the little pom cake toppers for me- which are from target by the way
caught just enough daylight
got creative on the ground w/white boards
it was sprinkling
but we did it, damn it
i love when people push and encourage me in that way
couldn't/wouldn't have done it without them
if you follow my posts- i made this same cake for v day but changed it up a bit w/ a chocolate buttercream + extra raspberry filling
the dark chocolate makes the buttercream more bitter and less sweet which pairs nicely with the tart raspberry
plus i like crunching on those little raspberry seeds
in other news, i don't know if i'm going to make it through the week
i've been feeling like my heart and mind are going to explode. together. all at once.
which is kind of weird because usually it's one or the other, you know?
feelings are the worst
dark chocolate cake w/ chocolate butter cream + raspberry filling
in stand mixer, whisk flour, cocoa powder, baking powder + soda, salt, espresso powder
in a separate mixing bowl, whisk eggs, buttermilk, oil + butter
pour wet ingredients into dry, mix until combined
boil 1 c. water, pour over chopped chocolate, allow to sit for 1 min or so then whisk until smooth
pour chocolate into cake batter
finally, portion out cake batter evenly to 3 cake pans ( i used 6 inch and had some cake batter left over ) // also i weight each pan to make sure it's even
baking until toothpick barely comes out clean // you do not want to overcook these babes
AP flour, 9 oz or 2 c. ish
good cocoa powder, 3/4 c.
baking powder, 1 1/2 tsp
baking soda, 1 t/2 tsp
salt, 1 tsp
espresso powder, 1 tsp
eggs, 2 + 1 yolk
buttermilk, 1 c.
vegetable oil, 1/2 c.
melted butter, 1/4 c.
semi sweet chocolate, 8 oz
boiling water, 1 c.
crush raspberries + sugar in small saucepan // bring to slight boil + simmer until thickened 20 min. or so
raspberry filling ingredients
fresh raspberries, 2 pints
sugar, 1/2 c.
cream butter for 5 min. or so // add in remaining ingredients // whip for another 5 min. or so to incorporate air
chocolate buttercream ingredients
unsalted butter, 3 c.
powder sugar, 4-5 c.
pure vanilla extract, 1 tsp
dark cocoa powder, 1 c.
heavy cream, 1/4- 1/2 c.
