i had the most peaceful experience yesterday
i went for a run by the lake
and afterwards i realized wait, i don't have anywhere to be
so i sat myself down at a picnic table and just took it all in
i did alot of people watching
and water watching
and music listening
people watching is relaxing to me
i can't put my finger on it
but it's like, i don't know, maybe it reminds me that we're all just trying to get through the day haha, that's dramatic, but you know?
there's usually one person that stands out, that i'll remember, that i'll wonder about
yesterday it was this pre-teen girl with a crazy curly haired pony tail riding a bright pink bike with a neon colored basket
i'm pretty sure she was wearing pink too
she was kind of a mess- rocking out, looking at her phone, and swerving all over the road
i loved her instantly
but back to my point,
i think we all just need a place where we can go and unplug
do you have a place??
a place to just be
to notice little things
little gestures people do
weird things that animals do
the ripples in the water
get out of your own head for a second, you know?
i lead mindfulness groups at my job
i encourage patients to focus on breathing, notice physical sensations, let go of past and future thoughts, just be in the moment
it's easy to get caught up in all of our stuff
it's easy to judge ourselves, our feelings, our thoughts
and sometimes we just need a reminder that all of it is okay
just notice, just observe, just be
i find a lot of peace in that
you know what else i find peace in?
these are super good- moist and soft but still dense enough to maintain the integrity of a muffin and not become a cupcake
+ that interesting crunch from the poppyseed (love those guys)
sweet but not too sweet for breakfast
i believe these are best served heated + buttered.
they also remind me of my granny
and not just any muffin can do that
LEMON + ALMOND POPPY SEED MUFFINS
melt butter in small saucepan over medium heat until slightly browned // set aside to cool
pour sugar into small bowl // zest 2 small lemons over the sugar // massage zest into sugar // set aside
whisk together flour, baking powder, soda, + salt // set aside
whisk together eggs, buttermilk, melted butter, oil, extract
add wet ingredients into dry ingredients // stir as little as possible- just to combine
pour into prepared muffin pan (i buttered + floured my muffin pan but you could use the muffin tins as well)
bake at 400F for 17 min or so (until slightly browned on top and not longer jiggly in the middle)
AP flour, 2.5 c.
baking powder, 2 tsp
baking soda, 1/2 tsp
salt, 1/2 tsp
eggs, 2 + 1 yolk
buttermilk, 3/4 c.
unsalted butter, 8 Tbsp
vegetable oil, 1/4 c.
almond extract, 2 tsp
sugar, 1 c.
