i wasn't entirely sure what to call this dish
a kale salad w/alot of bread, cheese, and tomatoes ?
caprese kale salad thing ?
whatever it's good
it's light and refreshing w/ a simple lemon dressing
but it's also quite satisfying w/ the toasted baguette & delicious cheeses
to be honest- kale has always seemed super trendy & super disgusting to me
but i'm pretty sure i was just doing it wrong
you can't buy the curly looking kale because it literally just tastes like grass
you must buy the lacinato kale & give it a lot of attention
for real- you literally have to massage the kale, make sure you use an acidic dressing, let it sit for a bit & allow the cellulose to bread down
the thing i like about kale is it's firm structure. most leafy greens wilt & get soggy pretty quickly but kale retains it's shape for a while. this makes it ideal to incorporate in soups, stews, casseroles. it's also kind of bitter in flavor and can add a touch of complexity/bite to dishes.
kale is often referred to as a "super food" due to it's high amount of nutrients & low amount of calories
i'm hesitant to even say or talk about kale as a "super food" as it implies that some foods are superior to others
let's remember- nutrition/health/wellbeing is not as simple as "eat this, not that"
all foods serve a purpose
any food will provide you w/ energy & could save you from dying of starvation
eating only kale for dinner would not be healthy- although kale has a ton of great nutrients, it's low in calories. low in calories=low in energy. so basically you would be hungry in like 5 minutes after eating a big bowl of kale. in fact, you wouldn't be able to absorb several of kale's nutrients without pairing it with fat and an acid [like lemon juice].
on the other hand, eating only chocolate chip cookies for dinner would not be healthy- if you do not balance out your meal with other nutrients like fiber and protein, it's going to be super easy to overeat on said cookies. and since cookies are pretty dense you're likely going to physically feel like shit if you eat too much sugar and fat in one sitting.
so what i'm trying to get at...
learning balance, really in ever aspect of your life, is what will make you healthy
get my gist?
toss tomatoes in 1-2 Tbsp olive oil, sprinkle of kosher salt, sprinkle of sugar
roast in the oven for ~50 min. at 325 F
make simple lemon dressing- whisk olive oil slowly into lemon juice and zest // add smashed garlic, salt + pepper to taste // set aside to allow flavors to marry
meanwhile- remove stems from kale, chop into small ribbons // set aside in a large bowl
next, toss bread cubes in butter & olive oil // spread onto cookie sheet + toast in oven [once tomatoes are done] for ~ 15 min. at 350 F
pour dressing over kale (remove garlic clove) // massage dressing into the kale (yes with your hands)
toss tomatoes, kale, mozzarella, toasted bread together in large bowl // grate a ton of pecorino romano all over the salad // toss the salad // grate more pecorino romano over the top [this cheese makes the dish in my opinion]
lacinato kale, 2 bundles
tomatoes, 1 small ct
pecorino romano, eh 3 oz block or so
mozzarella, 2 oz ball
garlic clove, 1, smashed
olive oil 6 Tbsp
zest of lemon, 1 tsp
kosher salt to taste
pepper, freshly grated, to taste
