today i woke up craving some old coldplay tunes. & black coffee of course. everyone likes coldplay, right? favorite song, anyone? i used to be in love w/ green eyes & white shadows but this morning i'm feeling sparks & till kingdom come.
i'm feeling pretty nostalgic, like i'm back in college, probably for more reasons than one, but especially coldplay.
i love how music can do that for you.
peaches are really beautiful. don't you think? i feel like they definitely stand alone if you can find them ripe & in season.
but snacks just deserve to be spiced up every now & again.
we really owe it to them.
i know grilling peaches is all the rage but i really just don't know anything about grilling.
so i brushed them w/ a touch of butter & roasted them in the oven instead.
added some blueberries then topped them w/an almond mascarpone cream basil situation which was just ridiculously good.
go make this & listen to some coldplay. i'll be there w/you, for sure.
slice peaches right down the middle side // twist knife (yikes) around the core // pull peach apart and twist out the pit
brush the tops of peaches w/ a touch of melted butter // roast in oven at 400F for 30-45 min depending on how soft you want these babes // throw your blueberries in the pan to roast for the last 5 minutes
meanwhile, beat heavy cream & sugar in a mixer until stiff peaks form // beat in mascarpone cheese, almond extract, and a sprinkle of fleur de sol
toast almonds in any leftover melted butter on the stove top for a couple of minutes
once peaches are done allow to cool a bit so your fancy cream doesn't melt all over the place
plate peaches and blueberries however you see fit // put a dollop of cream on top // top with basil and toasted almonds
blueberries, 1 pint
salted butter, 1 Tbsp
mascarpone cheese, 1/4 c.
heavy cream, 2 c.
sugar, 1/3 c.
almond extract, 1 tsp
sliced almonds, handful
a few basil leaves, chopped
