you won't believe what I did this week.
i deleted all of my work emails & now have a fresh inbox. i went from having 700 unread to 0. it feels pretty good. it helps me address issues in the moment instead of putting them off or avoiding. i have mastered the art of avoidance but am really trying to work on it these days. if something scares me or makes me anxious, i'm doing it anyway. it's pretty empowering but also uncomfortable, to be fair.
also, today i went for a run this morning before work & actually made it in 10 minutes early. if you know me at all, this is huge.
i don't know about you, but i've always thought that i'm one of those people that can thrive in chaos. which is true to some extent but i'm learning that being more organized has it's perks. like when i manage my time better w/cooking (rare) i definitely take it in & enjoy the process much more. i guess being chaotic feels like part of my identity so it's interesting to try & change my natural instincts. my priorities have always been relationships, fun, & being in the moment versus tidiness & organization. that kind of makes me sound like a child but whatever.

so i made strawberry, basil & bacon quesadillas for lunch the other day. think of it as a BLT quesadilla w/strawberries instead of tomatoes. these strawberries were so delicious, sweet, & juicy. i can't stand a tart, dry strawberry- nothing's worse. anyhow, the salty from the bacon & mozzarella matched with the sweet strawberry & fresh dark greens is just perfection. you might even drizzle a little balsamic in there if you're into that sort of thing.

finely chop up greens & herbs // slice strawberries // slice mozzarella
melt a little butter in a large saucepan // lay tortilla in pan & assemble by laying mozzarella, bacon, and greens // fold over tortilla & allow cheese to melt and tortilla to brown // flip after 2 minutes or so // repeat on other side
allow to cool for like 2 minutes // open tortilla up & pop those strawberries into the tortilla // drizzle strawberries with a little honey // close tortilla // cut into 3rds & serve!
8 slices center cut bacon
1 pint strawberries
ball of fresh mozzarella
~3-4 c. fresh spinach & arugula
5-6 basil leaves
1 Tbsp honey
